Birthday Girl

My precious angel had her 6th birthday last Tuesday the 23rd. She got a bone and lots of hugs and kisses ... she mostly enjoyed the bone! ... and some love from her daddy. I can't believe it's been 6 years. I remember her so well as a sweet puppy. Do all parents feel this way? LOL

WHEW that's HOT

Made dinner tonight. A Sandra Lee recipe. Love her food, HER not so much. Don't judge me!

So easy and SO spot on. Better than a restaurant!

1 lb. cubed raw chicken
1 pack of Shake N Bake seasoned/CRISPY mix
1 cup of buffalo wing sauce
1 tbsp of honey

Cut up your chicken and roll it in Shake N Bake (no need for egg, milk, etc) - is sticks to the chicken
Bake on 350 for 20 minutes.
3 minutes before it comes out, heat the sauce and honey in a bowl in the microwave for 2 minutes
When the chicken comes out, put it in the bowl and toss.

I also made Hidden Valley Ranch dip (the good stuff from a packet) and BABY - it was good. I think it is IMPERATIVE you get the Crispy Shake N Bake. The chicken stayed very crisp even after it was tossed in the hot sauce, YUM!

We will be making this again and it really only takes 20 minutes. It was totally Hooters worthy!

Checking In

So sorry I have not blogged in so long. It has been a rough two weeks.

I sort of got some new responsibilities at work, which is good, but man has it been kicking my butt! I am supposed to be learning ALL desks and I am suppossed to be taking over for people when they are on vacation, in addition to my own desk. So ... on the 8th somone went out for a week. Then that weekend I drove to the other side of Dallas to go to my sisters mother in law's funeral. It was a LONG weekend and pretty emotional. On the 15th someone ELSE went out for a week's vacation. SO, I don't think I need to say that I was SO looking forward to this weekend !!! I badly need it and I slept til 9 this morning, the first time in I don't know how long.

To compound things, we've had some issues come up. No, no nothing marital related .. just things involving other people and some worry. It sort of built up and built up and on Wednesday night we had a RARE fight. It took a good 24 hours to get over, complete with emails and tears (mine, LOL), flowers and a good talk. I REALLY like how Conrad and I have good conflict resolution and even better that he understands the importance of it. When things get emotionally charged I am usually the one to walk out of the room and I did this time too ... went straight to bed ... and that usually means no resolution! ... but the next day we regrouped and things and 100% better and I love that about us.

It gives me hope ... not that I need it ... but I mean, it means I think we can handle a lot of things... and that gives me peace.

I hope to be back later this week with pics and house stuff --- sorry I've deviated from that!

Sadness


My sister's mother in law, Ginger, has passed away. It wasn't really UNEXPECTED, but it was sudden. She had leukemia and had just gone into remission ... I don't think anyone really expected it.

She was young and she was a great mom and a great mother in law ...

I'm heading to Granbury tomorrow afternoon for all the funeral things over the weekend. Prayers and thoughts for my sister and Dave, pretty please.

Something New: Crawfish

Sorry I've been MIA. Sometimes after staring at a computer all day the last thing I want to do is come home and do it. So I sort of swore off the computer last week. It's good to be back!

So besides last year when everyone was trying to save money, our company has an annual crawfish boil and can I just say ICK ICK. The term around these parts is "Mud Bug" and I don't eat bugs. But I go every year- they have brisket and chips/hot sauce and of course I can hang out with all my friends in a casual setting ... so I always go and it's a pretty good time.

Conrad loves it- because he loves crawfish, they are expensive and frankly not the easiest thing to cook. I dated a Cajun for a few years, several years back - and God forgive you for being such a JERK- so I saw the crawfish cooking process up close and personal every year. It's gross.

This year, I told Conrad I needed to at least try it and so, yesterday - for my something new- I totally did. I would never ever peel these suckers cause ICK, but Conrad peeled one for me and I ate it. It was surprisingly NOT BAD. I don't think I'd ever sit down and order crawfish enchiladas anywhere - and I certainly would never stand over a table peeling them and sucking the heads - another attractive thing the c-fish eaters do- but it wasn't half bad and I would not run screaming from them as I have in years past. It was actually decent.

I'm glad I tried it. Now when people ask if I eat them I can say no, not really but I've tried them and they are pretty good. Still, if calories are at stake, I'd way rather have a plate of nachos or some chicken wings or something!
